How to make Purple Sweet Potato & Pumpkin Onde Onde




Pumpkin Onde Onde

Ingredients:

100g steamed and mashed pumpkin

 150g glutinous rice flour

1 tbsp. wheat starch

 ½ tbsp. oil

90ml water (add in slowly as pumpkin contain more water)

Purple sweet potato Onde Onde

Ingredient:

100g Steamed and mashed Purple sweet potato

 150g glutinous rice flour

1 tbsp. wheat starch

½ tbsp. oil

120ml water (or might be more)

Filling: 250g palm sugar (finely chopped)

Coating: 200g grated coconut + a pinch of salt (only the white part)


Method:

1. Steam grated coconut + salt together with pandan leaves until it softens. Set aside.

2. Chop the palm sugar.

3. To prepare the pumpkin ondeh ondeh - Shift the glutinous rice flour and wheat starch into a mixing bowl. Add in mashed pumpkin, oil and slowly add in the water. Knead it well into a smooth dough. (You may add more glutinous rice flour if the dough is too soft or sticky)

 4. To prepare sweet potatoes ondeh ondeh: Do the same step as the pumpkin.

 5. Roll the dough into an oblong shape. Cut all to the same size. Roll it in your palm to form a small ball, Make a small well in the center of the dough and fill it with chopped palm sugar. Seal the dough with a pinch. Roll into a small ball again. Do the same steps till all finish. Keep aside.

6. Ready a pot of boiling water.

7. Cook the balls in the boiling water and when the balls are cooked it will float up. Remove them with a sieve and transfer the balls onto steamed grated coconut and gently coat them evenly. And it’s ready to serve!
