Eggless Butter Cake

Eggless Butter Cake

Yield: 8” size square cake pan (lightly grease and line with grease paper)
Preheat oven @ 170°C

     (A)      Dry Ingredients (sift all the ingredients together) Keep aside
250g cake flour
1 tsp baking powder
½ tsp baking soda
(    (B)  Wet Ingredients (Stir until well combined)
390 g condensed milk
150 g salted butter (room temperature)
(C)
3 tbsp. icing sugar (can reduce to 2)
1 tsp vanilla extract
3 tbsp. water

Method
 1  1.  Prepare ingredients (A) and keep aside.
2   2.   Prepare ingredients (B) till well mixed and no more butter lumps and then add in icing sugar, vanilla extract and water till well combined.
  3.  Lastly, add in the dry ingredients scoop by scoop till all finish. Make sure no more flour lumps and when we stir the batter should fall like a ribbon. If the batters are too thick, add 1 or 2 tbsp. of water till it falls like a ribbon. (add water spoon by spoon)
4  4.  Pour the batter into the prepared cake pan. Spread evenly and tap to release air bubbles.
    5.  Baked at preheated oven at 170°C for 50-55 minutes according to your oven instructions. Test the cake with a cake tester. Remove from oven. Cool for about 10 minutes. Remove from pan, cut the edges of the cake. Then cut into pieces of a square for serving.







Note: For mixing, you opt to use a stand mixer, or hand mixer or manual whisk.
