Eggplant & Soy Sauce
This dish is simple which I saw in you
tube. Is a Korean dish and they called eggplant as gaji-namul. For vegetarian, you can omit the garlic and
the fish sauce. I hope you will like it as I do. Enjoy!!!

Ingredients
4 long
eggplants (wash and cut to 4 section. Then each section cut into half again)
Ingredients
Spring
onions (minced or finely chopped)4 cloves garlic (finely chopped)
Chile flake (optional)
Ingredients for sauce
1 ½ tbsp.
premium soya sauce or tamari sauce1 tsp. fish sauce (optional)
1 tbsp. roasted sesame oil
1 tbsp. lemon juice or apple cider vinegar
Garnish
- Roasted sesame seed (black or white)
- Chopped parsley leave
Method
1.
Prepare a pot of water for steaming. Boil at high
heat.2. Once the water is boiling, put in the eggplants and steam for 10-15 minutes. To test if it’s cooked or not, use a chop stick to poke thru the eggplant. If can go thru then is cooked. If cannot then steam for another 5 minutes or more.
3. While waiting for the eggplant to cooked, prepare the sauce. Mix all the sauce ingredients in a bowl together with chopped garlic and spring onions. Mix well and taste. Adjust according to your liking. Keep aside.
4. Remove cooked eggplant from the steamer. You can cut the eggplant into strip or use your hand to tear into strips. Put the eggplant into the sauce mixture and give it an even stir.
5. Put into a plate and garnish with parsley leave and sprinkle white sesame on top.
Note: Can also deep fried the eggplant and pour the
sauce over.
Tamari
is a non-process & gluten free soya sauce. For vegetarian, you can omit fish sauce, garlic & spring onion.
