Milky Cranberry Steamed Bun

 

Ingredients

(A) Combine all & rest for 5 minutes

5 g instant dry yeast

2 tbsp. water

1 tsp. low protein flour

50 g caster sugar

(B)

500 g low protein flour

250 – 290 g milk

(C)

30 g corn oil

(D)

100 g cranberry / raisin

 

Method

1. Put ingredients (B) in a mixing bowl except milk and add in (A) after it had fermented using speed 2 to mix till well combined.

2. Continue on speed 2, slowly add in milk till become a ball.

3. Now add (C) and continue to knead till become smooth dough. Total kneading is about 20-25 minutes only.

4. Remove the dough and round it like a ball and cover with damp cloth and rest for 45 minutes or double the size.

5. Split the dough into 2 equal sizes. Roll the dough to rectangle shape and sprinkle cranberry on top. Roll up and shape into a loaf shape.

6. Place the bun on a grease paper, put into a steamer and rest for another 30 minutes or size increase to double before steaming.

7. Steam bun for 20 minutes. Serve it hot.

 

Tips: Before steaming, steamer water has to be 100% heat.
