Guinness Stout Chocolate Cupcakes


Serve        : 24 cupcakes (size 9”)
Preheat oven    : 160°с




Ingredients
(A)
250ml Guinness stout
250g butter, cut cubed
(B)
75g unsweet cocoa powder
350g caster sugar/brown sugar
(C)
2 (L) eggs
1 tsp. vanilla extract
140ml sour cream
(D)
225g plain flour
2½ tsp. baking soda
Topping
150 g soften butter
140g soften cream cheese
500g icing sugar
1 lemon juice
Method
1. Prepare a pan. Put all ingredients (A) into the pan with medium flame till butter dissolve but not boiling.
2. Then add in (B) till all dissolve and keep aside to cool slightly.
3. Now prepare KitchenAid mixer. Put all ingredients (C) to mixer bowl with whisker from speed 2-4, whisk till all well combined. Now lower to speed 2 gradually pour the Guinness Stout mixture and continue to whisk till combined.
4. Add in (D) spoon by spoon and whisk till smooth texture.
5. Spoon to cupcake mound and bake at 170°с for 20-25 minutes.
Method for topping
1. Beat butter, cream cheese & icing sugar till creamy and smooth. Add lemon juice accord to your taste. Pipe the cream cheese on top of the cool cupcake.
 


 


Note: Guinness Stout can be replaced by orange soda/orange juice for those cannot consume alcohol.
