Chocolate Mousse


Product: Artisan Stand Mixer (5KSM150) with whisker
Serve 4


 


Ingredients
225g bitter dark chocolate (break into small pieces)



2 tbsp. brandy/orange juice/water (brandy taste better)
4 eggs, separated


3 tbsp. double cream


Method




  1. Melt the chocolate with brandy or juice in a double boiler but do not touching boiling water of saucepan.
  2. Put the egg yolks and melted chocolate into the mixer bowl with the wire whip beat on speed 2 till thick and creamy.
  3. Change to speed 1, add the cream till fully incorporated. Keep aside.
  4. In another mixer bowl, whisk the egg white on speed 8 till stiff and peaking.
  5. Fold in the chocolate mixture till well combined.
  6. Spoon the mixture to serving dish and chill for at least 1 hour or more before serving.


(Best to keep overnight)
