Pastry Stick Biscuits



   Pastry Stick Biscuit
Flavour: Pumpkin, Green Tea & Bamboo Charcoal

Ingredients

50 g all-purpose flour/pastry flour/plain flour

175 g bread flour/high protein flour

5 g salt

185g unsalted butter (cut into cubes)(cold butter)

 50 g Pumpkin dried flake (how to make refer bottom notes)

120 g cold water

For sprinkle

Black sesame seed (accordingly)

Coarse sugar (accordingly)

 
Method for Pumpkin Flavour

1. Measure all-purpose flour, bread flour and salt together, and put them in a mixer bowl and put in the refrigerator to cool them for 30 minutes.

2. Cut the unsalted butter into small cubes, and store them in a fridge to cool well for 30 minutes too.

 

3. Pour pumpkin flakes or powder into and No.1 flour mixture.  Then, put No.2 butters into the flour mixture too.  Mix well at Speed 4 until the butter cubes become crumbles (About the size of small beans (5 mm)

 

4. Pour cold water bit by bit and mix them until it gathers into a ball.  Transfer the dough and all the bits to lightly floured work surface.  Roll the dough out with a rolling pin until it becomes 10 cm in width, and 30 cm in length.

5. Fold the dough forward at 1/3 in length, and fold the other end backward at 1/3 in length on top of the other layer.  Wrap it with a plastic wrap, and rest it in a fridge for one hour.

 

6. Repeat steps No.4 & 5 again and rest for another 30 minutes. Then prepare the work place with a no stick placemat or a silicone mat for rolling the dough.

7.  Roll the dough out to a thickness of 3mm, and cut it in 1cm in width and 8 cm in length.

 

8. Prepare a flat plate. Put coarse sugar and black sesame on the plate, mix well. Cut dough’s strip and roll onto the plate and place it on a baking sheet pan. Then bake them at 180 degrees in Celsius for 15 minutes and at 150 degrees for 15 minutes or more until the pastry stick become golden brown.

To made pumpkin powder/flakes

100g fresh pumpkin, remove skin and steam till soft. Mashed and dehydrate till dried. Grind into powder.
For others flavour

Bamboo charcoal – 75g plain flour & bamboo charcoal powder 2.5g. Other ingredients follow as above no sesame

Green Tea             - 75g plain flour & 15g green tea powder. Other ingredients follow as above & sprinkle with white sesame seed.

Tips

Keep in airtight bottle.
