Homemade Anchovies Mayonnaise
Ingredients
2 Egg Yolks (large)
2 cloves chopped garlic or whole
2 tbsp. Red wine vinegar or apple cider vinegar or lemon juice
1 tbsp. Mustard
1 can of Anchovies
½ cup Olive Oil
Seasoning
Parsley leaf
Coarse black pepper
A pinch of sugar & salt
Preparation
1. Combine egg yolk, garlic, vinegar, mustard, olive oil and 4 strips of anchovies in a KitchenAid 3-5 cup food chopper, chopped till ingredients are well blend and mixture is thick in bright yellow.
(Note: If you prefer sourish taste, add extra vinegar)
2. The balance of the anchovies together with olive oil and the seasoning blend well with the above mixture at speed 1. Press 3 times only. (Note: Don’t over chop. We want to have small bites for parsley and anchovies and add more seasoning according to your taste)
3. Transfer into a container and keep chill before serving.
