Vegetarian Steam Black Sesame Bun with Red Bean Paste filling

450g Hong Kong pau flour or plain flour
50 g black sesame powder (buy from organic shop)
8 g instant active yeast
50 g organic brown sugar
5 g sea salt

280ml or more water

20g each of red bean paste (According to how many buns made)

Method
1. Put all (A) into a mixer bowl and mixed well. Add (B) bit by bit till and keep kneading till dough is almost form. Then add (c) keep kneading till dough is form. (The texture of dough will look soft). If using Kitchen Aid mixer knead dough for 10 minutes at speed 2 only.
2. Remove the dough from mixer bowl. (Floured your hand with flour before removing the dough from mixer bowl. The dough texture is soft) and rest the dough for 1 hour or double in size.
3. Floured the working surface before removing the dough from bowl. Punch down the dough to remove air. Divide the dough into 25g each.
4. Wrap the bun with filling and roll like a ball. Spray water on surface and coat with sesame seed. Repeat till all buns complete.
5. Put the buns on a cup cake paper and let it rise for 30-45 minutes or till double in size.
6. Steam at high heat for 15 minutes or till you smell aroma from the bun.
7. Serve hot.
