Blueberry Bun

Ingredients
Dough
2 tsp active instant yeast
2 ½ cups bread flour/high gluten flour
1 egg (L)
2 tbsp caster sugar
½ tsp salt
½ tsp nutmeg powder/cinnamon powder

½ cup milk

125g cream cheese, soften
125g unsalted butter, soften

Bun filling
½ cup unsalted butter, cut into cubes
1 cup brown sugar
3 tbsp maple syrup/corn syrup/honey
1 tbsp cinnamon powder
2 boxes fresh blueberries
Method
-Combine all the filling till well mix using K-beater.
-Spoon a teaspoon of filling into bottom of each greased 12 muffin cups. The balance keep for the dough.

Method
Dough
1. Attached dough hook into the mixer. Put all the dry ingredients into the bowl and mix well.
2. Change to speed 2, gradually add the milk in and continue to knead almost become a dough.
3. At the same speed add the cream cheese and butter and knead for another 5 minutes or till elastic or shiny dough.
4. Remove the dough and place in a floured bowl, cover and let it rest for 1 hour or until double in bulk.
5. After resting, roll out dough into rectangle about ½ inch thick. Spread the balance of the filling onto the surface and roll up.
6. Cut into 12 portions and put into the prepared muffin cups.
7. Allow to rest again for 30-35 minutes before baking. Glaze with egg wash.
8. Bake for 30-35 minutes or till brown.
9. Turn out and serve warm.
