Orange Suji Cake
Ingredients
Step 1
2 big size oranges

270g butter
110g caster sugar
(B)
6 egg yolk (B)
1 tbsp honey

240g suji flour
240g grounded almond
½ tsp baking powder
½ tsp salt

1 8in (20cm) square cake tin
Preheat oven 175c.
Preparation for Step 1
1. Prepare a double boiler. Wash the oranges together with 100ml water and put into the double boiler. (best to use electric boiler with the timer. Set to 5 hrs)
2. After 5 hrs, remover the oranges from boiler and blend it till smooth.
(Don’t cut the oranges. The oranges should be soft when it’s cooked)
Reason: To be able to blend the whole fruits into smooth paste.
Preparation for step 2
1. Put (A) into mixer bowl and beat at speed 2 & 4 till light & fluffy.
2. Now change the speed to 2, add (B) one at a time and beat thoroughly after each addition.
3. Stir in the honey with speed 4.
4. Now change back to speed 2, add (C) and mix well with speed 4 & 6.
5. Now change back to speed 2, add (D) and mix well with speed 4 & 6 and keep aside.
Preparation for Step 3
1. Used another clean mixer bowl. Attached whisker and put in egg whites. Beat from speed 2, 4, 6 & 8 till soft peak (2 seconds). Change back the speed to 2. Add in sugar and gradually increase the speed from 2, 4 till 6 and beat till peak.
2. Fold the egg white mixture into egg yolk mixture spoon by spoon using fold in method till well blended.
3. Spread batter into prepare tin.
4. Bake in oven at 175c for 40-45 minutes or until cooked.
