Watermelon Sorbet

Watermelon Sorbet
Makes 1/2 Bucket

Ingredients
150g / 2/3 cup caster sugar
150ml/ 3/4 cup water
1.75kg watermelon, discard seed and cut to cubes.
Rinds from 2 limes and juice according to your taste

Decoration (optional)
Chopped mint leave

Method
1) Boil sugar and water in a saucepan till sugar dissolve. Chill till cold.
2) Put discard watermelon. Add syrup and watermelon into blender and purée till well combine.
3) Strain and add lime juice and rind into the mixture. Chill for another 20 minutes before pouring into ice cream bucket.
4) Pour the mixture into Cuisinart Ice Cream Maker. Turn timer to 60 minutes.
6) Serve with fresh chopped kiwi fruit.

Tips:
- If the sorbet still look soft, turn the timer to another 30 minutes without the arm motor attached.
- Always remember to chill your mixture before pouring to the ice cream bucket.
