Walnut Cup Cakes



Ingredients For Cup Cakes



220g butter



180g caster sugar



4 egg (size B)



220g self rising flour



100g chopped walnut



Topping



Icing



(A)



200g butter



200g icing sugar



(B)



1 tsp vanilla essence



1 tsp grated lemon rind



Cream Cheese Topping



Beat 250g cream cheese - use speed 2 then speed 4 till smooth.



Add 60g butter + 120g icing sugar



Then Add 1/2 lemon zest (grated) and 2 tbsp lemon juice - mix into the above mixture and beat till well combine.






Method for cup cakes



1) Place paper cups into muffin tin.



2) Combine (A) in mixer bowl at speed 2 for 3 minutes then change to speed 4-6 beat till light & fluffy.



3) Change back to speed 2 and add egg on at a time till mixture is well mix.



4) At speed 2 fold in flour spoon by spoon then to speed 4 beat till mixture well combine.



5) Spoon the batter into prepared cups and bake for 25-30 minutes at 180 c till cooked.



6) Remove from oven & cooled on rank.



7) Topping with icing or cream cheese.
