Vegetarian Mee Rebus
Serve 10 - 15 people

Ingredients
Soup Base
(A)
1 small size pumpkin, peeled & cut
1 or 1.5 kg potatoes, peeled & cut (you can add extra)
1 large carrot, peeleed & rough cut
300g roasted peanut powder
1/2 bottle of chillie sauce or according to your taste
4 pcs of assam keping, wash
Soup Seasoning
Chilli paste (must be vegetarian)
Salt, sugar & mushroom seasoning.
(Add according to your taste)

1-1.5 kg Yellow noodle, bleach with boil water for 5 minutes. don't over cook
Bean spourt/taugeh, bleach with boil water
Taukua or Tau foo pok
Cucumber, cut strips
Garnishing
Minit Leaf,
Small lime cut into half
Cut chillie

Method
1) Put 1.5 to 2 litre water into stock pot and boil at high heat. Add all ingredients (A) and boil at medium heat till all vegetable are soft. Remember to take out the assam keping before blending.
2) Use handstick blender and blend till all well puree.
3) Now add in the soup seasoning according to your taste.
4) Eat with noodle and serve hot.

Note: If you like you can add chicken breast meat or any others ingredients to your mee rebus.
