Pandan Snow Skin Mooncake

Ingredients (18 small moon cake)
Skin
(a)
40 gm vegetable shortening
75gm icing sugar (shifted)
(b)
75gm kou fun (shifted)
30gm Santan powder
(c)
60gm water + pan dan juicer
1 tbsp vanilla extract
Filling
Lotus paste (20gm each) 18 balls
Or red bean paste

Method
1) Attach k-beat using speed 2 to beat (a) till light & creamy then chug to speed 4.
2) Then add (b) spoon by spoon then pan dan juice.
3) Keep repeating the above step till all evenly mix.
4) Weight the skin dough about 20gm each. This depend on the size of your moon cake mould.
5) Press the skin dough on your palm and wrap the filling.
6) Press the dough into the moon cake mould.

Notes:
Filling and shaping moon cake.
Use the dough and press onto the lightly floured mould and level the surface. Remove the dough and weight. Here you will know how much you need for each biscuit

Biscuit and filling.
You need 50 percent dough n 50 percent filling.
Mould-
Need be lightly floured before pressing into the mould.
To remove the dough- overturn the mould then tap the 2 sides of the mould n front against the table lightly.

Other flavour for skin - dragon fruit.
