Cream Cheesse Apple Tart


Tart Shell (Sugar Dough Pastry)
110g cold butter (cut to cubes)
60g caster sugar
1/2 tsp vanilla extract
125g plain flour, sifted
a pinch of salt (optional)
Cream Cheese Filling
1 egg
1/2 tsp vanilla extract
220g cream cheese
50g caster sugar
10g volka (optional)
Topping
3-4 green apples, cored, peeled and thinly slices (depends on the size of the apple) or enough to fill the pie dish.
50g caster sugar
1/2 tsp ground cinnamon
20-30g almond flakes.

20cm (8") loose base pie dish.

Method
To prepare tart shell.
1) Cream butter, sugar & vanilla extract using speed 2-4. Gradually mix in flour to form a smooth dough.
2) Spread & press dough evenly onto the base and sides of the pie dish. Cut the edge evenly.
3) Bake for 15 minutes or until golden brown at 185-190C. Remove from oven.
To prepare cream cheese filling.
1) In the mixer bowl, beat cream cheese & sugar using K-beater at speed 2-4 till smooth.
2) Add egg & vanilla essence, cream until well combined. Set aside.
To assemble and bake.
1) In a bowl toss apple slices, sugar & cinnamon & set aside.
2) Spread the cream cheese filling onto the cooked tart shell evenly.
3) Arrange the apple slices on top and scatter the almond flakes over.
4) Bake for 40-45 minutes or until golden brown.
5) Remove from oven & leave to cool before cutting.
