Redbean Bun

Ingredients

(A)
500g high protein flour
5g (1tsp) instant active yeast
(B)
50g sugar
5g (1tsp) salt
5g (1tsp) milk powder
(C)
50g(1) egg
250g water
(D)
50g butter
(E)
500g red bean filling, roll into ball (20g) each

Method

In mixer blend (A), (B), at speed 1 for 1 minute till well blend, add (C) bit by bit till a dough is form.
Add (D) and blend 10 – 15 minutes till bread dough is shiny and springy.
Use a damp cloth to cover, allow to leaven for 40 to 50 minutes till bread dough double its size.
Divide the dough into 30g each.
Roll bread dough till smooth and shiny, proof for 10-15 minutes.
Flatten the dough and fill it with red bean. Roll it into a ball. Repeat till all finish.
Allow the bun to proof again for 40 minutes or till dough size is doubled.
Bake at 190c for 15 minutes or till golden brown.
