PEACH BUTTER CAKE
INGREDIENTS
160g butter
160g caster sugar
3 eggs
1 tbsp lemon juice
160g plain flour
60g grounded almond
1 can peach halved (drained)
METHOD
1) Grease a 23cm (9 in) pir pan. Preheat the oven to 190 ºc
2) Beat the butter and sugar until light and fluffy
3) Add in eggs, once at time, beating thoroughly after each addition
4) Stir in lemon juice, fold in sifted flour and ground almond. Mix until well blended. Spread into prepared pan
5) Arrange peach halves on top of the batter. Bake in oven for 30 minutes.
