DURIAN SWISS ROLL
Kitchen Aid – KSM 150 Stand Mixers
Durian Swiss Roll
INGREDIENTS
4 eggs
70g caster sugar
1/4 tsp vanilla essence
80g plain flour
50g butter (melted)
Filling
100g fresh cream (whipped)
200g – 300g durian flesh (slightly smash)
Topping
150g durian flesh pureed
40g sugar cook until it turn thick.
40g water
Methods
1) Preheat the oven to 200℃; grease 20x30cm baking tin; line with baking paper
2) Using KitchenAid mixer on full speed, beat eggs and sugar until light and fluffy. Add in essence, mix well. Gently fold in shifted flour, add in melted butter, and mix until well combined.
3) Spread mixture into tin. Bake for 8-10 minutes. Leave it cool/
4) Turn cake onto sheet of paper, spread with whipped cream, and follow by durian feeling. Roll gently from narrow end.
5) Decorate with durian topping, slice and serve.
