ORANGE PASSION FRIUT CAKE




KitchenAid – KSM 150 Stand Mixers


Orange & Passion Fruit Swirl Cake

Passion Fruit Curd (quantity for 2 cakes)
60gm butter chopped
150gm castor sugar
2 eggs slightly beaten
1/4 cup fresh orange juice
2 tsp corn flour
1/2 cup passion fruit pulp (include the seeds)

Method
1. Combine all the ingredients in a heatproof bowl.
2. Stir mixture over a pan of simmering water for about 10 mins or until the mixture thickens.
3. Cool it completely before adding on to cake mixture.

Cake (quantity for 1 cake)
300 gm butter
4 tablespoon grated orange rind
300gm castor sugar
6 eggs
300gm self raising flour
1/2 cup fresh orange juice

Method
1. Grease & lightly flour a 21cm baba cake pan.
2. Beat butter, orange rind & sugar at speed 4-6 until white & fluffy.
3. Add eggs one at a time. (use speed 2 when adding the egg the change to speed 6 to combine the mixture. Repeat this every time you add egg)
4. Spoon 1/2 the cake mixture into the prepared pan. Add 1/2 passion fruit curd in.
5. Top up with remaining cake mixture.
6. Use a knife or a metal skewer to swirl the curd through the cake.
7. Bake at 175 C for about 50 mins
8. Wait for cake to cool before turning out.
9. Dust with icing sugar.

NOTE: If bake as cup cakes, baking time is 18 to 20 mins.
