DOUBLE CHOCOLATE BROWNIES

DOUBLE CHOCOLATE BROWNIES
300g luxury dark chocolate
200g butter
200g caster sugar
3 eggs
2 Tbsp Frangelico liqueur (optional)
75g self-raising flour
75g roasted hazelnuts, chopped
80g-100g white chocolate chips
METHOD
1) Preheat the oven to 190ºc. Grease and line the base of a 23cm square baking tin with baking parchment.
2) Break the chocolate into small pieces and place in a double boiler or in a heatproof bowl oven, but not touching, a saucepan of boiling water. Add the butter and heat until melted.
3) Beat the sugar and eggs thoroughly using the flat beater on speed 4, and then with the motor still running, gradually drizzle in the melted chocolate mixture and the Frangelico if you are using it. Allow to cool slightly, then and the flour and hazelnuts and mix with the flat beater on speed 4 to combine. Finally, add the white chocolate chips and fold in briefly on speed 2.
4) Pour the mixture into the prepared tin and bake for about 25 to 30 minutes or until just set. Remove from the oven and allow to cool in the tin.
